GENERAL CONCEPT & DESIGN

All technical advice & assistance in the conceptual planning, designing, furnishing and equipping of the hotel to desired standards including : Preparation of architect’s brief and program of areas.

The facilities to be provided. Scrutiny and approval of preliminary concepts, schemes, perspectives & estimates prepared by the service consultants and make appropriate recommendations.

FACILITIES & OPERATIONAL AREAS

Scrutiny and approval of detailed design, layouts, cost estimates and time schedule for all public and service/ operational areas of the hotel. Preparation of kitchen and ancillary layout plans. Detailed planning of other operational areas like floor pantries, service areas, stores and receiving areas, staff facilities & other back-of-the-house areas.

HOTEL EQUIPMENT & OPERATIONAL ITEMS

Preparation of schedule of kitchen equipment as per plan. Assistance to the service consultants of prepare lists of all specialized equipment and installations including those required for laundry, boilers, water treatment plant, lifts etc,.

Preparation of operational requirements of linen, crockery, cutlery, glassware, hollow ware and other specialized service equipment. Detailing the requirement of graphics & advice on the design and concept.  

PROCUREMENT

Advice for the preparation of time schedule and requirements of hotel stores. Advice and recommendations on the preparation tenders, and analysis of bids in the selection of contractors and suppliers of hotel stores. Advice on the selection quality and cost control of material, equipments, furniture and furnishings.

MENUS

Preparation of menus of various restaurants. Costing and pricing the menus. Advice on selection of menu card design-based on the restaurant concept.

MANPOWER

Detailed list of manpower requirements. Advice on the wage structure, Identification of critical posts and time schedules for recruitment and training.

APPLICATIONS

Assistance and advice in the preparation of applications for approvals, licenses, etc.,

MONITERING
